Baked Salmon Filets with Pesto and Parmesan

We eat a lot of salmon. It's such a great, healthy protein and I love it. Fortunately, my family loves it as well.

Baked Salmon Filet with Tomato Pesto and Parmesan

I can't remember where I got this idea, but it's so easy and you can switch up the pesto options. My kids prefer the tomato pesto featured in the photos, but this is good with any kind - traditional basil pesto, roasted vegetable pesto, anything. But the one pictured is the one I used tonight.

Any type of pesto works with this recipe, but my kids prefer the tomato & ricotta type.

I buy frozen salmon filets and usually get 5 or 6 pieces of salmon in the package. Today I got only 5 pieces, but they are good sized filets.

There's not much else to say so I'll get right to the recipe. The pictures below show how the salmon looks as you place and spread the pesto and add the Parmesan.

Baked Salmon Filets with Pesto and Parmesan

Serves 5-6 people

5-6 salmon filets (thawed)

5-6 Tbsp pesto (any kind will do)

1 Tbsp olive oil

Pinch salt

5-6 Tbsp grated Parmesan cheese

1. Pre-heat oven to 375F. Grease baking pan with olive oil and sprinkle a pinch of salt over the oil.

2. Place each salmon filet on the baking sheet, leaving room in between each piece.

3. Place about 1 Tbsp of pesto on top of each salmon filet.

4. After each piece has a bit of pesto, use the back of the spoon to spread the pesto out to cover the salmon.

5. Sprinkle 1Tbsp of grated Parmesan on each piece of salmon.

6. Bake for 15 minutes (or until just done). You can brown the cheese by broiling for just a couple of minutes.

Goes great with any green vegetable and rice or potatoes.
